1 egg, 1/2 c. sugar, 1 1/2 c. oats (not instant), 1 c. milk, 1/4 c. oil, 1 tsp. baking powder, 1 tsp cinnamon (optional),add any fruit.
Mix all together, Dump into a greased 8×8 pan and bake @ 350 for 20-25 min. Needs to be cake like when done.
Now to make it healthy, I substitute applesauce for the oil and use diced apples for my fruit. I also use goats milk in place of regular milk.
Apple Baked Oatmeal (Simply Delicious, The Costco Way)
2 c. oatmeal (not instant), 1 1/2 tsp. baking powder, 1/2 tsp. salt, 1/4 c. chopped pecans, 1/4 c. raisins or dried cranberries, 2 cups diced apples, 3 large eggs, 2 cups milk, 1/3 c. brown sugar, 1/2 tsp. cinnamon
Mix oats, baking powder and salt. Stir in pecans, raisins and apples. In another bowl whisk together eggs, Milk, brown sugar and cinnamon. Pour over dry ingredients and mix. Dump into a greased 8×8 pan and bake at 325 for 1 hour, until golden brown. Serve warm!
