6-8 fresh tomatoes, peeled and cubed (Boil your tomatoes for a few minutes, until the skins crack then run under cold water and the skins will fall right off)
2 stalks celery, chopped
1 bell pepper, chopped
1 onion, chopped
1 tsp. Italian seasoning
1 Tbsp. Sugar
Throw everything in the crockpot and cook on low for 4 hours.
You can either can this or freeze.
